Head of the American Institute in Taiwan (AIT), Christopher Marut, and acclaimed US chef Bryce Gilmore paid a visit to an award-winning restaurant that specializes in xiaolongbao (soup dumplings), Din Tai Fung. They also learned how to make the dumplings there.
Gilmore is in Taiwan on a culinary exchange to promote food from the United States. He also cooked for a reception on Thursday organized by the AIT in celebration of American Independence Day. Gilmore said he had never made xiaolongbao before and he’s very interested in bringing the dish back to the United States.
"Yeah, this is definitely a unique experience for me. Back home we do a little pasta and things like that, but this is very unique and fun," said Gilmore. "I think this is something I’d like to practice and try to get good at and take home to the states, you know, a lot of practice," he said.
Marut also said that this is his first time making xiaolongbao. He said it was really difficult but fun.
